We've all probably baked a couple dozen cookies. How would you feel about baking more than 15,000 items?

That's the tall order received by Jacquie MacDonald, owner of Jacquie's Smart Foods, a company that bakes health-conscious treats.

MacDonald's baked goods are sold at Fit Life Foods, a new company that sells "grab and go" health-conscious, pre-packaged meals and snacks at its stores. Fit Life Foods is supplying the Republican National Convention with snacks, which is how Jacquie got the big order.

Over the past few weeks, MacDonald, who is a Dunedin resident, rented out the kitchen of Sweet Caroline's bakery in Palm Harbor, so she and her team could fulfill the large order.

MacDonald does not use animal by-products in her baked goods. She bakes a wide-variety of health-conscious items, including gluten-free banana muffins, gluten-free blueberry muffins and sugar-free carrot cake.

"Most of the people who eat our food have no idea it's vegan," she says.

There are three Fit Life Foods stores in the Tampa Bay area, including at the border of Safety Harbor and Clearwater.

A Fit Life Foods store is scheduled to open soon in St. Petersburg. Fit Life Foods is located at 2454 McMullen Booth Rd., #305, Clearwater, (727) 408-5146.

Jacquie's Smart Foods are also sold at the Eco Bean Organic Coffee House, at 501 North Pinellas Ave., in Tarpon Springs; (727) 937-1967.
